Classic Apple Cake
(modified by me from the "Spice and Spirit" cookbook)
3/4 cup oil
3/4 cup sugar
3 eggs
3 cups flour (1/3 to 1/2 of that amount can be whole-grain flour)
1 tsp baking powder
3 cups peeled, cored, and cubed apples
1 cup raisins (can use dried cranberries as well)
(This recipe can be doubled or tripled; 4 eggs for a double batch, and 5 for a triple)
Preheat oven to 350 Fahrenheit.
Grease and flour a 9-inch tube or bundt pan.
In a large mixed bowl, beat oil with sugar. Add eggs, then flour and baking powder. Set aside.
In a separate bowl, toss cubed apples and raisins. Stir apple mixture into batter. Batter will be very stiff.
Spoon into the greased tube or bundt pan and bake for 1 hour. Cool completely before cutting.
